The recipe of hanging caciocavallo originates from an ancient tradition of southern Italy. The spinning cheese gives way to the passage of the blade of a knife and then is smeared on a slice of toasted bread. It’s the beginning of a dining experience to share, full of history and flavor.

In Pignola, Basilicata, tradition has it that friends, relatives and villagers flock to the square to live together moments of joy and conviviality.

I remember that we children enjoyed helping the adults set fire until, once lit, the crowd began shouting in chorus: “Hang him, hang him…”At that point the oldest of the group proceeded slowly towards the embers holding a head of Caciocavallo ready for the gallows. Enchanted, I would watch the cheese melt until it succumbed to the elder’s sharp blade, which easily smeared it on a slice of freshly toasted bread. The children, thankfully, were the first to get a slice of it.
That taste is unmatched in my memory. Now I live with my family in the most beautiful city in the world, Rome. I can no longer participate in those moments of conviviality and feel the typical flavors of my land.
I got a little nostalgic.
For this reason, a few years ago, I returned to celebrate this ancient rite on the occasion of dinners and parties with my closest friends.
It was they, jokingly, who proposed to me to bring this tradition all over the world. I took them seriously. I raised my glass of wine in front of the grill and said, “Hang it!”
